That's the thing ... the sound card on my mobo just gives me sound from 2 speakers normally. In winamp, it works through all 5, thanks to the plugin.

Well, I really don't need to convert all my mp3s to 5.1. I'd be happy if all 5 speakers were utilised by all the applications instead of just 2, so that it'll sound like the sound is coming from all...

RHL 9.0 does not natively allow you to access NTFS partitions. Almost all other distros will allow you to access them. I think you need to get a patch or something for NTFS to work. Check this out:
