It depends on the proxy. If it's not encrypted, then yes, it's easy for them to see what you're doing.
I suggest Tor from the EFF.

More important than the software you have mentioned is file permissions, user permissions, and general security policies.
And you may not really need the AV, depending on what the server is used...

MAC filtering is a fairly simple concept to grasp.
