I personally like RedHat better, due to its interface. You may however like Mandrake better, since it all boils down to personal taste IMHO.
The best way to learn linux or anything for this...

cwk9 is absolutely correct. A firewall is only as good as it's configured.
I personally use Kerio, and love it.
