One thing I have noticed is a trend to try to solve security issues with tools, instead of the system itself. Good practices and configuration are the best tools you'll ever...

Yes and no...
It depends on the proxy. If it's not encrypted, then yes, it's easy for them to see what you're doing.
I suggest Tor from the EFF.

SE Linux is enough IMHO.
You have to tailor the policies to fit the machine and the purpose.
If it is purely a webserver... the only things that should be running are Apache, FTP, and possibly...

More important than the software you have mentioned is file permissions, user permissions, and general security policies.
And you may not really need the AV, depending on what the server is used...

MAC filtering is a fairly simple concept to grasp.
Don't show them that you can sniff the network, don't let them know what you can do until they trust you.

I would wait until an administrator has logged off of the machine, and just grab the cached logon.
Many administrators do not take steps to prevent this.
