hop-on info true open port
is it possible that trojans/hackers could send info/packets true a port that is being used for example your mail program?

If they have hacked onto a high ended port and sent packets through using the mail service? If they are using the SMTP protocol then perhaps but generally it would be a TCP packet. For instance a TCP SYN flood only syncronizes the packet and would be sent sort of as a ping request/flood.
Also, if the port is open, then information could be sent through it but for a packet, it would probably have to be a TCP port.
