I would actually recommend the Everybuddy client for those that are using *nix. This provides legitimate logging of all conversations you have had through it.
If you are logging and trying to prevent someone from knowing that you are doing so, which is unethical and illegal if you are not the machine/network admin, I would actually recommend using one of the many apps out there that provide for TCP packet sniffing. Sniffit works relatively well for chat apps run through everybuddy, gAIM, licq and the like. TCPDump works as well. You'll of course have to weed out the stuff you don't want, but perhaps you can configure that to happen in the background.
If you are highly industrious, you could take an open source client like Everybuddy, isolate the part of the source that causes for logging and make it an absolute with no option to disable it. Just a few things you could look at.
Now mind you, I am not condoning any illegal or unethical activity. This is said with the belief that you are monitoring your own system or network with proper permissions.
