Internet Vulnerability Guide
Well I found this PDF document to be quite interesting even though it's a little outdate...2001.07.26. But it was a very good read in my point of view. The thing that I really like about this document was how it documents a service such as Finger and gives you a through check about it.
Risk Factor,Complexity,Popularity,Impact,Root Cause, and many more ...

Dated stuff can still be cool. Besides, I'm sure there's more than a few places out there where some of those are still open.
Here's a security manual that I've tossed out here twice already. It's written for the security admin type with a bunch of good info as well. Roughly 325 pages total.

Sorry about the bad link, folks. I tried to copy and paste it, but the page wasn't cooperating, so I tried to type it by hand. Still think it has some good info. Maybe one of these days I'll get around to reading it cover to cover.
