Simple NTFS Permission Question
Does anyone know if it is possible to have a permission that is create only, not edit or delete.

Yes,
See the advanced section under security. You will see create listed as one of the options.

Under security, advanced, view/edit
I see Create Files/Write Data , but not create files only..

You'll notice the other option is for directory creation. The create data permission is the one you most likely are looking for.

You need the create files/write data because you can't create the file without writing it to the disk. If this is the only one you select then the person woulf be abe to create a file and add to it in the single session but not see it or open it at a later date to edit or delete it.
