I am trying to install IIS on a windows 2000 professional SP4 box but when I get to the add/remove windows components I do not see IIS on the list. Have any of you guys seen something similar to this? Any help would be appreciated. Thanks in advance

Are you on a domain? It is possible to prevent IIS through the use of group policy. Though, I'm unsure if it'll actually remove the option from add/remove windows components. I have not tested it.
Quitmzilla is a firefox extension that gives you stats on how long you have quit smoking, how much money you\'ve saved, how much you haven\'t smoked and recent milestones. Very helpful for people who quit smoking and used to smoke at their computers... Helps out with the urges.
I just remembered a neat little gem. It may help here too..
Edit (with notepad) c:\windows\inf\sysoc.inf
Under the [components] section there's a list of individual parts of windows. Yes, the things you see in Add/Remove Windows Components.
Look for lines with HIDE and remove the hide but make sure you leave the commas!
