I am not sure what is in the default install, but I think that you get something like the add/remove Windows components screen if you select custom install.
I can't comment on recent versions of the server because I have never thought to look, and I have never had to do a clean install of one since 2000server.
I would mention that over here in the EU, MS cannot default media player in their installations.......... it is contrary to EU law
