I'll keep it short and sweet: If you are a business or for some reason need a lot of drives and have a lot of money then SCSI. Otherwise, the cost doesn't really justify the increased speed, etc. you get with SCSI and you should probably just go with EIDE.
And number of drives doesn't even matter really anymore with the number of motherboards on the market with 4 IDE channels - that means you can have 8 drives - even some of the biggest midtowers have troubles fitting that many drives in there.
SCSI are great drive if you are running a high access network or really need those extra RPMs on your drive. But, with SCSI comes big dollar signs, granted they are faster, but they cost almost twice as much as a EIDE drive of the same size. EIDE are good for small offices that are networked and good for workstations and home users. SCSI should (mainly) be run on servers because of their hot-swappable capabilities (when setup the correct way).
Besides price, SCSI is the best.
SCSI because you can add more than just harddrives. Scanners, CDrom's, harddrives,...etc...etc...:D
