Use a packet sniffer (this is what i do...) i just have it sniff any packets that contain AIM format characters... Hope this helps, works pretty well for me...

You can log everything with trillian. It will keep track of users and message history.
It is turned on by default, but you can turn it off.
Works pretty well for me.
