preventing spam

Whats the best way to stop spam bots getting your email address from your website?

I could just put the email into an image but I'd like to be able to do something so that the user can still click on the email to open Outlook Express, as with the standard mailto:

most of the time spammers buy your e-mail address form a list, my suggestion is to not give your real e-mail address unless you realy need too, plus uncheck all the boxes at the bottom of a page when you subscribe like check to receive mail from our sponcers
