I have a boggling question. Is it possible to stream video from an ubuntu server to an xbox 360? if so how could I go about doing such a thing? any and all help/question are appreciated.

Should be possible, assuming the Xbox has some Windows Media Player type application. For starters have a look at VLC.. Other options are MPEG4IP, Darwin Streaming Server and good ol' ffmpeg/ffserver.
