i've come across this one: http://www.webattack.com/get/abckeylog.html , it may be the right solution for you as it seems you can only edit the logs after a password as been typed.

Might I suggest simply blocking the ports needed to run IRC? Unless you want them to have it for some other reason, this is probably best. As for porn, it just sorta pops up everywhere. But I guess you would at least know if they're looking for it.
As for a keylogger, hardware solutions are available too. You can get little devices that go between the keboard plug and the motherboard, or keylogging keyboards that look just like the real thing. They can usually hold up to a year's worth of keystrokes. They can't send email though, if that's what you're looking for. But the ones listed above are pretty good for what you are looking for.
