jbclarkman,
Good to hear another soul is coming to the linux-family ... anyway , if you go there be sure to feel and learn the power of CLI. Lots of tools are more powerfull via cli imo...
And don't hesitate to ask questions, there are no dumb questions ...

I'd say Slackware. It's completely free of charge with no "pay us or join a Mandrake club" crap, so you won'ty get screwed there, and the install is a good one. It's similar too Free BSD to, meaning if you ever wish to try that you won't be totally new to it.
I've written two or three tutorials here for slackware and for Free BSD so you can use thoseto make sure ti installs fast, and from there, well, Nessus can be a bitch sometimes, but a little hug and kiss at night and it will do what you want.
I need to point out that I haven't slept, and just slammed downa RedBull and Vicodin, so I'm starting to wake up so the typos here should be minimal.
I'm working on something right now:
Slackware + Free BSD Dual boot.
Knoppix STD can be cool, but don't count on Autopsy, damn tool is a curse. Had to do a paper on it for my security +
