Its possible, but why do you want to know how to do it? Are you asking us (those who care about providing computer security) how to committe a felony? Doesn't that strike you as a silly thing to do? Go back to watching Digimon and eating Lucky Charms....
Now that I did the compulsory flame, let me tell you how to intercept email. Go outside, attach a Fucia Box (you can get instructions from www.giggle.com, the worlds best search engine) to an outside DSL Line, and wait. The Fucia box will have the email address of the person you want to spy on (like [email protected] for example) programed in it, and will copy any email with that address in it. This works because the internet sends email to every server in the world, in a vain attempt to find its reciepient. Sort like Darth Vader trying to find the rebels in Empire Strikes Back.

Get a packet sniffer and set it up so you can view the individual packets that are going out your computer. Blah Blah Blah and don't do it with out permission or you could go to jail.

Get a Shiny Badge with the FBI or CIA and you will be king of the hill :D Off course do not attempt to intercept emails before you get the nbadge because they don't accept people with criminal records... :) Mmmm well CIA probably does BUT they will probably kill you once they used you for what they needed you for :D

Second: I KNOW that the thing I was asking is illegal BUT I suspect that someone is intercepting the mails of my company AND this is why I've posted this thread . I hope that that's fine with you Jag.

For argument's sake, let's say this is legit...
If you are responsible for the integrity of your company's LAN (hmm), then what you don't need is a "utility" that with break into your email server. What you DO need is to look at your logs and see who has connected, from where, and when. You (being the system administrator if that's the case) do keep logs, don't you?
What type of server are you running? Mayhaps I can help you track down this "hacker." No really! If someone is doing something illegal on your server, I'd like to help you catch him and have him carted off. That way, we'll both be happy.
If your company's email is not serviced from your own server but instead by means of a commercial service, then you can inquire this information from the provider of that service. (They have system administrators that know how to do their job and I'm quite sure that they keep logs, too). Once you get that information, call the local police department. It's that simple.
Oh yeah... If you are not responsible for your company's LAN, then I suggest that you contact the system administrator of your company's LAN. I'm sure that he would know how to do his job as well (and yes... I'm pretty sure that he keeps logs, too). You may not want to tell him about your inquiries here at AO, though. I don't think that would go over too well. Then again... Maybe you should?
