which, as you said you wanted GOOD and home made, probably isn't what you wanted to hear :)
You post these recipe posts and I get all excited (LOVE to cook!) but you never want anything I can help you with! :p
1. Stock cubes (to suit the meat)
2. Spring Onions (finely chopped)
3. Garlic (crushed or puree)
4. Tomato Puree
5. Soy Sauce
6. Wocestershire Sauce.
7. Black pepper
I wouldn't put any salt in until you have tasted it.

Here is a very simple one :
A roast of porc, slice an apple and put it in the bottom of the roasting dish. Add a layer of white wine and a small bit of oil. On the porc roast slice the top slighly in a couple of places and put some sliced garlic in. cover with a layer of honey and add thyme and a small bit of pepper. Put in the oven and cook.
Its been a while since i tried this so I will have to test it to make sure I havent forgot something but normally it turns out ok.
Food glorious food ................
1 box of macaroni. Boil until soft. Add cheese.

I have that recipe:
1-2 onions
1 can of tomato sauce
2 cans tomato paste, stewed tomatoes
oregano
basil
2 cloves garlic
salt & pepper
add water to desired consistency
1 cup mushrooms
1 tbsp olive oil
if you want it to be a meat sauce, add meat :)
Sautee everything except for tomato paste, sauce, stewed tomatoes, and meat for about 10 minutes. afterwards add tomato products and meat and let simmer. the longer the better.

Yes, mincemeat or flaked dried cod (Bacalao) (boil it and skin it first, then flake it)
You might also experiment with 1 tsp of Worcestershire sauce, 1tsp of lemon juice, and 1 tsp of Balsamic Vinegar of Modena.
Adjust the salt late in the process; with the dried cod you won't need any ;)
And the pasta?........................it has to be radiatori for IT people.................they look like miniature heatsinks

never had mincemeat before tho.
I grow my own Chilli's and tend to use them in everything ............
Green Salad, generously sprinkled with Green chilli, gives NO warning :) but is surprisingly tasty .........
One tin chopped tomatoes
2 green chilli's - finely chopped, seeds and all
basil - I use the dried varient, but fresh or frozen works just as well
Oregano - same as for basil
bacon - 2 rashers per person, this is usually for two people
Pasta - at least 4oz [a GOOD handful] per person
fry or boil the bacon first, then put all the ingredients [bar the pasta] into a DEEP pan, and boil up for a wee while [10 mins ish]
prepare pasta [boil]
depending on your type ?
either mix the pasta into the DEEP pan before serving OR load dishes with pasta and THEN load sauce on top.
Pepper to taste, I don't use salt.
For those that can't stand V hot chilli loaded food, add an extra 4 bottles of COLD beer as a side dish for them :D

We also have a "mincemeat" that is made of currants, sultanas, raisins and dried fruit peel that is used to make "mince pies" at Christmas.
Come to think of it, we also have faggots :shocked: ................................they are savoury meatballs in a thick dark onion gravy (sauce) :D
yeah, i figured the mincemeat you were talkin about was the type you put in pies.

Pasta o ail
2 cups Olive Oil
min 4 cloves of garlic finely chopped
1\2 jar capers finely choped
1 can anchovies finely chopped
heat oil and add above ingredients....cook for half hour or til garlic is golden and anchovies\cpers have disolved
just before adding to fresh pasta add 2 cupss fresh parley (chopped)
Toss on fresh linguine..in pan and cook for a couple minss add steamed arugula or brocolli
mmmmmmmmmmmmmmmmmmm
amounts are approx....feeds min 6 hungry people

For the pasta sauce...this one is a bit different, as it's "raw" and served at room temperature. My son loves it!
3 large tomatoes, chopped
2 tsp of minced garlic
3 T olive oil
1/2 T balsamic vinegar
1/4 cup chopped fresh basil
2 whole green onions, chopped
salt, to taste
black pepper, to taste
Mix together in a bowl and let it sit for about an hour, then serve over whatever sort of pasta you like, and add whatever kind of cheese you want (I like the Sargento Italian 5 Cheese stuff!)

Just the sauce...serve your pasta like you would with any other sauce! :D
Here's a very quick and easy pasta dish. I like to have this with a mixed salad and a good piece of stake.
Choose your favourite flat pasta and prepare in the normal way. When cooked, drain then add a can of chicken or mushroom soup then heat gently. You can further enhance the dish with diced ham or cooked bacon.
Mmm Campbells condensed soup :P

Really bad thread to read just before lunch, I'm Hank Marvin now and I've just got sh1tty sandwiches (pieces in Eccose) to eat.
My home town is the origin of the Forfar Bridie. It's a kinda flat meat pie with mutton mince. Best eaten with HP brown sauce and your eyes closed. I think there is an EU protection order on 'Forfar Bridies' now.
About 15 miles away you get Arbroath smokies (smoked haddock). If you every find yourself in the North East go to the sea front in Arbroath and get a fresh smokie and eat it out of the paper. It's ambrosia.
Spent many happy years travelling up and down the East coast, frequently stayed at,Arbroath, Montrose, Stonehaven, etc. Almost drowned at Arbroath when a kid, and many wished I had :DQuote:

I have not been up the east coast..........................Spent some time in and around Oban though. Night diving for Norwegian lobsters/Dublin Bay Prawns.
Now, have them with some salad and a nice dressing.

Granny Opal's Homemade Ice Cream
Max Yield 6 quarts - use extra vanilla if you go that much!
1 can Eagle Brand Milk
2 cans Evaporated Milk
3 eggs
1 cup sugar
1 tsp Vanilla
Mix sugar and eggs, add vanilla and milk, then add homogenized milk to amount desired.
If you want, add fresh bananas or peaches as well!
This recipe is older than I am, requires no cooking whatsoever, only patience with an ice cream maker and lots of ice and rock salt. Enjoy!
