The problem is too big to solve.
First define:spam.
Second is all of computers, devices, botnets and scammers are scattered all over our entire planet Earth.
Third is they all need to be found and eliminated ... please.
Best of luck with that. However, if you do figure out a way to do that, you WILL probably be very rich!
yeah, this is kind of new age modern problems. Your email has everything about you, and you must secure your email. For personal use and for the professional too. Corporate email security is not an option it's must.

I did notice that when you write a little custom php mail script ( not convention label id and values ) then the spam drops. I wonder if bots go around looking of "footprints" of popular and conventional contact forms.
Email spam is the use of electronic messaging systems to send unsolicited bulk messages, especially advertising, indiscriminately. Spam emails are a nuisance and can be harmful because they may contain malicious links that can compromise the security of your computer or personal information. Some spam emails may also try to scam you by offering fake products or services or by asking you to provide personal or financial information.
To protect yourself from spam emails, you can use spam filters and email blocking tools that are provided by your email service or email client. You can also be cautious when clicking on links in emails and avoid opening emails from unknown senders. It is also a good idea to use a strong and unique password for your email account and to enable two-factor authentication whenever possible.
