linux. a 2.4.x kernel and use iptables
the *nix and kernel are free(ish) and the hardware need only consist of an old 486 + your xdsl modem.

you can leave a small (20-30Mb) gap (unpartitioned space) at the start of the drive, the only major gotcha is that win2k & XP should be installed before *nix (m$ is annoying in it's ability to trash...

I've had partition magic totally fsck a disk with multiple partitions (FAT32 & NTFS) whilst re-sizing.

Mandrake, RedHat & SuSE are good for starters.
It's worth trying a few distro's, you'll learn lots and you can figure out which will suit you best.
If you want solid security then also look at BSD...

Have a look at other MTA's (mail transport agents), Sendmail is powerful but a bastard to configure correctly, Postfix seems fairly popular these days and is a lot easier to configure, have a look...
