I thing you may be getting this because ettercap is telling target_ip that it is target_ip as well. I'm not sure what the syntax might be to stop this.

I use VMWare all the time for tests. Having two machines is better is some ways, by VMWare can be a quick and easy way to set up a lab in a box.

Cain can be 5 kinds of flaky on wireless, depending on what card/chipset you are using. If you want to modify the content, you may want to look into using Ettercap filters instead.
