KorpDeath has sumed it all up really.......
You have to enter the name of a valid SMTP server and it's not like the old days when you could just type any.(Hotmail use to be my favourite).....So the only SMTP server that'l work is your own. If you use your own than obviously your IP is going to get sent with your email.
Your friend just has to cut and paste that IP into something like NeoTrace and he'll have a pretty good idea where it came from.....Anyway, good luck. You've got alot of reading to do!
