Moz and SEMRush are arguably your two best friends in this case (SEMRush is arguably more advanced). You can gather SEO data from these sites dating back month by month and from there decipher which keywords are working, and search new keywords that have a reasonable search volume that could potentially be a good fit for your site.

Short-tail keywords are broad and competitive, while long-tail keywords are more specific and have less competition. A mix of both can be effective. You can use keyword research tools like Google Keyword Planner or SEMrush to identify relevant keywords and assess their search volume and competition.

Make a list of important, relevant topics based on what you know about your business.
Fill in those topic buckets with keywords.
Understand how intent affects keyword research and analyze accordingly.
Research related search terms.
