You could try to, but I am not sure what would happen.
For example you can dual boot XP and NT4 or one of the home OSes but you need to load the home OS first and then the NT based one, as this is the one that supports dual booting.
I would try a google search and the Microsoft support site looking for dual booting of Windows 2000 and Windows 2000 Server.
