ArPaNET
A quick google search should give you all the information you need...
as stated it isnt wise to uninstall it..but in vista ...you can hide it.
Also from my quick google search I found that IE7 does not have the same vulnerabilities that IE6 had...where as just having it installed ...even though you never used it....having it installed would leave you vulnerable.
as with other persons here I use both FF and IE....all depends what I am doing.

Other things to consider?
1. Microsoft install IE as a part of Windows. They do NOT give an option or an uninstall facility. So, all their updates, service patches and the vainglorious WGA assume that you have IE installed........... it would not be a good idea to mess with it?
2. The EU gave M$ a spanking for antitrust....... they made them remove MediaPlayer from Vista........... IE would have been the obvious candidate, but even EU politicos and bureaucrats aren't that stupid. Basically, Windows won't work without it...........even if it is never used.
3. All bets are off............... you will invalidate any warranties and consumer rights you might have had. Nobody will support anything on a system like that.............
EDIT: I did uninstall it back in the days of Windows 98 ("gold", not SE) but I do not think that it is possible today.
