there are a few options for your users...you can use PGP like others have said, or you could try out scramdisk, which is much like PGP for desktop/file encryption. the files can be password protected for access and encrypted with any of the popular, strong methods.....3DES, blowfish..just to name a few. or there are other lesser programs like magic folders.......
