I have always found Mark Minasi's books quite helpful. For example, "Mastering Windows 2000 Server - Fourth Edition" is quite good and covers every aspect of configuration and administration.
As others have indicated, there are many excellent sites on the Net that will help you out, but I would recommend this book to be on your shelf for ongoing reference and in-depth learning.
